Linguine with Avocado, Tomato & Lime
Ingredients per 1 portion:
De-stone, peel and roughly chop the avocado. Roughly chop the tomatoes and coriander. Deseed and finely chop the chilli and onion. Put all these ingredients in a bowl and mix well.
Cook the pasta according to pack instructions. For al dente pasta, this would usually be about 10 minutes. Meanwhile, grate the zest and squeeze the juice from the lime and add into the avocado mixture. Season well with salt and pepper. Mix together.
Drain the pasta, toss into the bowl containing the avocado mixture and mix well. Add a good glug of olive oil to the pasta and serve straight away while still warm or when cold, if preferred.
